Hasselback Sweet Potatoes

Ingredients
4 medium sized Sweet potatoes
1 tablespoon Unsalted butter (melted)
1 teaspoon Olive oil
1 teaspoon Finely chopped fresh thyme leaves
1 clove Garlic (grated)
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/3 cup Plain Greek-style yogurt
1 Scallion (white and green parts chopped)

Step by Step Instructions
  1. Preheat oven to 425 and line a baking sheet with aluminum foil. Make a series of 1/8-inch slices along each potato, each one slicing 2/3 of the way through their body
  2. Mix the melted butter, olive oil, chopped thyme, grated garlic, the salt, and the pepper together in a small bowl.
  3. Rub each of the potatoes with the butter mixture (make sure to get it into the slits as well).
  4. Roast the potatoes for 50 minutes or up to 1 hour. Halfway through the cooking time, remove the potatoes from the oven for a moment to gently fan the slits apart slightly with a fork before returning them to the oven to cook.
  5. Mix the yogurt and scallions with some salt & pepper to form a sauce.
  6. Serve the potatoes warm with the scallion sauce
